It has a concentrated ruby color with dark reflections; mineral nose, ferrous, then more and more Mediterranean with notes of rosemary; it is decisive in the mouth, the black fruit breaks in involving the structure in a full and very long display.
With meats on which not only the degreasing capacity counts but the fiber, the gustatory tension are important, therefore lamb, roe deer. Over time it becomes remarkable on aged goat cheeses.
