Black Chickpeas from Cascia (PG)

Unlike other chickpeas, this variety is completely black and has a wrinkled skin that protects the inside, preserving a more pronounced flavor.

Our advice: soak the chickpeas for 24 hours in warm water. Once this is complete, simmer them slowly, adding spices and herbs, or simply boiling them, but don’t overdo it. This chickpea has a distinctive flavor that would otherwise be lost.

Try cooking them and serving them fresh with a little rosemary, try cooking them in a soup with a little garlic, or try making a “pasta e ceci” (pasta and chickpeas) with them.
