The white mold that covers this pecorino has been recreated naturally, after years of meticulous studies, thanks to the herbs preserved in our Monte Cucco Park.

In 2008, the President of the Accademia della Muffa Nobile of Bologna recognized Walter Facchini with the HONOREM DIPLOMA with the title of MASTER GASTRONOMO, for having rediscovered this rare mould.

Subject to natural weight loss. Vacuum packed.
